Can we get over the mildly corny name here for a second? When my mom first found out about her gluten problems, she was eating some of the grossest excuses for bread. Like, brown rice bread. dude, let’s be honest here: brown rice bread tastes like birdseed. So, when I figured out that gluten and wheat made me ill, I was all like, “eff that birdseed ish, let’s find the real deal”.
I was hesitant to eat a bread made from something that normally composes puddings, but I was pleasantly surprised. the bread is tiny but perfect. When toasted, it has the same texture as regular bread, PLUS it tastes like a mild sourdough. I don’t know about y’all, but I’m way into that. It’s pretty close to having real bread, low calorie, plus it’s slim to none in the allergens department.
Anyways, it costs like a million dollars (usually around $6) a loaf at most groceries stores, so go buy it in bulk from Amazon. You can freeze it, keep it in the freezer, whatevs. trust me. If you’ve been trying to find a bread substitute that doesn’t taste like it was endorsed by The Audobon Society, this tapioca loaf from Ener-G is it.
